There are two things to consider for determining the CFM

And the Cooking Style

Under 900 CFM

Light Cooking

Not a lot of frying or grilling, cooking with less spices.

900 - 1200 CFM

Normal Cooking

Grilling and frying but not a lot of spices

Over 1200 CFM

Heavy Cooking

Grilling, frying and heavy usage of spices and herbs

Ducted or ductless?

If your kitchen layout won’t allow for venting outdoors, then you will need a recirculating range hood. Range hoods that convert to recirculating (ductless) require an additional accessory.
